HOW TO USE
Combine 1 ½ cups mix, 2 tablespoons plus 1-teaspoon oil, and 1 ½ cups water (added slowly) in a bowl. Stir vigorously with a whisk until powder is just combined and no lumps remain (approx. 10-15 stirs). Use sufficient water for a batter that is smooth but not too runny. Prepare a slightly thicker batter for waffles.
Cook per instructions below.
Add toppings of your choice!

For Pancakes: Pour batter onto pre-heated, greased pan or griddle for the pancake size of your choice. If desired, add toppings to the uncooked side and cook until the edges are dry. Flip and cook for a further 1-2 minutes to desired color.

For Waffles: Pour batter onto center of hot, greased waffle maker, close lid. Cook until steaming stops. Carefully remove waffle and, if necessary, re-apply a spray of oil and repeat.

THOUGHTS
Meh. Definitely not the soft, moist and fluffy pancakes that I am used to and love. These are the opposite. They are crispy and crumbly. They don't hold well...well they didn't. It wasn't until I was about 2/3 of the way through the box that I finally figured out a formula that worked for me. The trick is to make a very thin batter.

Initially I thought a thicker batter was the way to go since it didn't hold together very well and fell apart easily and was crumbly, but thin is definitely the way to go. It held together and stayed together pretty well. Even beyond the crumbling though it doesn't taste that great. I could definitely taste the ancient grains. It has a mealy, earthy, grainy (not as in texture but actual grains) taste to it.

I mean if you really really want some pancakes, but need to avoid gluten AND dairy then I guess these would do in a really desperate pinch...especially since it's so hard to find foods that are both gluten and dairy free, but it won't completely satisfy your craving if you're wanting pancakes...at least not enough to forget about it and move on with your life. It will satisfy you enough that you're not preoccupied and wholly focused on wanting to have some, but you won't be satisfied enough to forget about it. You will move on with your day and life, but it will still linger at the back of your mind.

I made mine with some dark chocolate morsels because I don't think I would've been able to eat them completely plain without anything else, but it still didn't mask the taste. Definitely won't be repurchasing this. It's expensive, which is why I felt compelled to finish the box, but not worth the taste. Finding gluten free products or diary free products is easy, but trying to find both gluten and dairy free is hard, but onward I go with my search. I guess I just won't have any pancakes until I find another one to try.

Oh, and I forgot. I tried to make these in my waffle iron and it was a huge mess. Remember how it doesn't hold together well...yeah. Definitely do not try and use in a waffle iron. I don't know how they made theirs look so decent on the box...and I followed their instructions.
